At some points during the year, for example, trying to get your hands on those fresh strawberries you\u2019ve been craving is nigh impossible. You then learn to enjoy the seasonal shifts in availability and take the opportunity of those periods to gorge on your favorite types of produce, and maybe even try processing them to enjoy in different forms, such as pickling plums to get umeboshi.<\/p>\n<p>Our Japanese-language reporter <strong>Go Hatori<\/strong> <a href=\"https:\/\/soranews24.com\/2021\/08\/11\/how-to-make-epic-umeboshi-like-a-japanese-grandpa\/\">first tried out making umeboshi in the summer of 2021<\/a>, and this year he\u2019s going to teach us <strong>how to make homemade red pickled ginger using the leftover umezu (plum vinegar) from the process, plus shiso (a Japanese variety of the perilla herb)<\/strong>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711440 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_133_umezu.jpg?w=640\" alt=\"\" width=\"640\" height=\"441\" \/><\/p>\n<p>Of course, if you haven\u2019t been making you own pickled plums, you might not have your own batch of leftover umezu. Not to worry, though, because umezu\/plum vinegar can also be purchased in supermarkets, and online through Amazon Japan and Rakuten too.<\/p>\n<p>Go has tried his hand at making red pickled ginger with umezu in the past, but it was just a simple version with finely-chopped regular ginger, thrown straight into the umezu. <strong>This year was going to be different<\/strong>, as he decided to not cut corners and <strong>try out an authentic method<\/strong>. After doing some online research, he narrowed down the key to its creation, and that was to <strong>use young ginger<\/strong>. So, he popped down to the supermarket, picked some up, and washed them well.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711438 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_137_IMG_5792_1200.jpg?w=640\" alt=\"\" width=\"640\" height=\"853\" \/><\/p>\n<p>The next step was to thinly slice it, and <strong>sprinkle on some salt<\/strong> to help draw out the moisture.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711439 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_143_IMG_5794_1200.jpg?w=640\" alt=\"\" width=\"640\" height=\"853\" \/><\/p>\n<p>Go then placed a weight on top for about an hour\u2026<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711436 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_149_IMG_5797_1200.jpg?w=640\" alt=\"\" width=\"640\" height=\"853\" \/><\/p>\n<p>\u2026 and when he came back, he found a lot of liquid had been squeezed out. He proceeded to squeeze a little more by hand to force out even more liquid.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711437 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_155_IMG_5812_1200.jpg?w=640\" alt=\"\" width=\"640\" height=\"853\" \/><\/p>\n<p>Once the ginger was <strong>wrung as dry as possible<\/strong>, Go laid out the slices inside the net he usually uses to make umeboshi (he bought his at Daiso, but they\u2019re easy to find in home\/garden centers too)\u2026<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711434 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_161_IMG_5813_1200.jpg?w=640\" alt=\"\" width=\"640\" height=\"853\" \/><\/p>\n<p>\u2026 and <strong>dried them overnight<\/strong>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711435 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_167_IMG_5818_1200.jpg?w=640\" alt=\"\" width=\"640\" height=\"853\" \/><\/p>\n<p>Returning the next day, he found that they had dried out nicely.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711432 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_173_IMG_5865_1200.jpg?w=640\" alt=\"\" width=\"640\" height=\"853\" \/><\/p>\n<p>They weren\u2019t completely bone-dry, but a great deal of the moisture had evaporated.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711433 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_179_IMG_5866_1200.jpg?w=640\" alt=\"\" width=\"640\" height=\"853\" \/><\/p>\n<p>Go cut them into <strong>bite-sized pieces<\/strong>\u2026<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711430 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_185_IMG_5867_1200.jpg?w=640\" alt=\"\" width=\"640\" height=\"853\" \/><\/p>\n<p>\u2026 put them into a jar, <strong>poured in umezu<\/strong>\u2026<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711431 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_191_IMG_5869_1200.jpg?w=640\" alt=\"\" width=\"640\" height=\"853\" \/><\/p>\n<p>\u2026 until the <strong>slices were fully submerged<\/strong>\u2026<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711428 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_197_IMG_5871_1200.jpg?w=640\" alt=\"\" width=\"640\" height=\"853\" \/><\/p>\n<p>\u2026 and let them<strong> rest for a few days<\/strong> to soak up the flavor.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711429 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_203_IMG_5872_1200.jpg?w=640\" alt=\"\" width=\"640\" height=\"853\" \/><\/p>\n<p>They were finally ready.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711426 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_209_IMG_6321-2_1200.jpg?w=640\" alt=\"\" width=\"640\" height=\"853\" \/><\/p>\n<p>Go put a pinch of pickled ginger into the bento he was planning to eat for lunch.<\/p>\n<p><strong>\u25bc \u201cWooooaahhhh!!!\u201d<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711424 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_221_kandou.gif?w=500\" alt=\"\" width=\"500\" height=\"640\" \/><\/p>\n<p>And it was <strong>shockingly delicious!<\/strong><\/p>\n<p>Go has always enjoyed red pickled ginger, but this was by far <strong>the most delicious that he had ever had<\/strong>.\u00a0There were no unnecessary flavors; just the taste of natural and fresh red pickled ginger. The level of saltiness was also perfect.<\/p>\n<p>Comparing his recent creation to store-bought versions, as well as the homemade red pickled ginger he had attempted before, the difference was as clear as night and day. Go believes <strong>the key lay in the moisture removal and drying step<\/strong>.<\/p>\n<p>In fact, Go loved this red pickled ginger so much that\u2026<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711425 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_222_IMG_5916_1200.jpg?w=640\" alt=\"\" width=\"640\" height=\"853\" \/><\/p>\n<p>\u2026 <strong>he immediately went out and bought some more young ginger<\/strong>.<\/p>\n<p>Go processed it the same way\u2026<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711421 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_228_IMG_5919_1200.jpg?w=640\" alt=\"\" width=\"640\" height=\"853\" \/><\/p>\n<p>\u2026 but this time using <strong>about three times the amount of ginger<\/strong>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711422 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_234_IMG_5929_1200.jpg?w=640\" alt=\"\" width=\"640\" height=\"853\" \/><\/p>\n<p><strong>He devoted every last remaining drop of umezu to making red pickled ginger<\/strong>, demonstrating just how much it had captured his heart (and stomach).<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711423 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_240_IMG_5946_1200.jpg?w=640\" alt=\"\" width=\"640\" height=\"853\" \/><\/p>\n<p>Finding out that red pickled ginger <strong>keeps for about a year<\/strong> was music to his ears. Certainly, with the amount that he made, it would take him about a year to get through it all anyway.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-711420 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2025\/09\/imgi_246_IMG_5962_1200.jpg?w=640\" alt=\"\" width=\"640\" height=\"852\" \/><\/p>\n<p>There is still young ginger in Japanese supermarkets available to purchase, so if you want to try your own hand at making some, you should go and pick some up. Of course you shouldn\u2019t forget the umezu if you don\u2019t have any to hand.
