However, aside from its <a href=\"https:\/\/soranews24.com\/2025\/05\/06\/taste-testing-japans-i-love-obama-cakes%E3%80%90taste-test%E3%80%91\/\">\u201cI love Obama\u201d desserts<\/a>, there\u2019s <strong>a local fish that could outshine Japan\u2019s most famous celebratory fish<\/strong>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-727560 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2026\/02\/imgi_2_25_01310.jpg?w=640\" alt=\"\" width=\"640\" height=\"427\" \/><\/p>\n<p>Japan\u2019s food culture is extensive, filled with deeply historical and regional specialities, many of which never leave their hometowns, and Obama has one too: <strong>Kodai no Sasazuke<\/strong> (1,836 yen [US$11.72]).<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-727549 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2026\/02\/imgi_3_25_01099.jpg?w=640\" alt=\"\" width=\"640\" height=\"427\" \/><\/p>\n<p>In Japan, <strong>sea bream<\/strong> (called <strong>tai<\/strong>) is quite a big deal, with the most famous variety, called <strong>madai <\/strong>(red sea bream), being traditionally served at weddings and celebrations because its name sounds like <strong>medetai<\/strong> (\u201causpicious\u201d or \u201cjoyous\u201d).<\/p>\n<p>\u25bc Yes, it\u2019s the same \u201ctai\u201d from the delicious fish-shaped dessert <strong>taiyaki<\/strong> (which doesn\u2019t actually contain any fish).<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-641814 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2023\/11\/Aerosmith-taiyaki-Japan-sweet-copy.jpg?w=640\" alt=\"\" width=\"640\" height=\"550\" \/><\/p>\n<p>While madai is still enjoyed in the coastal <strong>Wakasa region of Fukui<\/strong>, where Obama is situated, it\u2019s the variety of <strong>renkodai (yellowback sea bream)<\/strong> that is the darling of the region, all thanks to <strong>sasazuke<\/strong>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-727558 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2026\/02\/imgi_4_25_01312-2.jpg?w=640\" alt=\"\" width=\"640\" height=\"427\" \/><\/p>\n<p><strong>Sasazuke was developed in the late 19th century<\/strong>, before refrigeration, when fish from the Sea of Japan needed to survive the journey inland to Kyoto along the historic trade route known as the <strong>Saba Kaido<\/strong> (Mackerel Road). The solution of the time was to <strong>lightly salt the fish, cure it in rice vinegar, and pack it into small cedar barrels<\/strong>, resulting in a preserved product that somehow still manages to taste remarkably fresh.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-727557 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2026\/02\/imgi_7_25_01316.jpg?w=640\" alt=\"\" width=\"640\" height=\"427\" \/><\/p>\n<p>\u25bc Nowadays, they come with plastic cups to catch any leakage, since leaks are an intended feature of the design.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-727556 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2026\/02\/imgi_6_25_01314.jpg?w=640\" alt=\"\" width=\"640\" height=\"427\" \/><\/p>\n<p>Opening up a barrel of Kodai no Sasazuke, <strong>there\u2019s no strong fermented smell to be found, nor does it look heavily pickled<\/strong>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-727553 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2026\/02\/imgi_9_25_01318.jpg?w=640\" alt=\"\" width=\"640\" height=\"427\" \/><\/p>\n<p>Instead, it <strong>resembles sashimi<\/strong> (raw sliced fish) with a light color and firm texture, and the flavor lacks the sour and salty tastes commonly associated with preserved foods, presenting the <strong>clean sea bream flavor with an enhanced umami<\/strong>. While it is a marvelous dish just by itself, according to the instructions on the wrapping, <strong>it can also be used in sushi, vinegared dishes, or clear soups<\/strong>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-727554 aligncenter\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2026\/02\/imgi_10_25_01321.jpg?w=640\" alt=\"\" width=\"640\" height=\"427\" \/><\/p>\n<p>Compared to other contemporary preservation methods, sasazuke must have been revolutionary to the residents of Kyoto who could enjoy the delightful taste of something very close to the fresh seafood that they lacked easy access to.<\/p>\n<p>Even today, sasazuke remains a special part of life, with the cedar barrel making it appear as if it\u2019s some sort of ceremonial offering.
