Kayanoya isn\u2019t a dedicated confectioner, though. They\u2019re primarily a producer of <strong>dashi<\/strong>, Japanese soup stock, and yes, they have dashi cookies too!<\/p>\n<p>\u25bc Some Kayanoya shops even have a counter where you can get cups of piping hot dashi soup (\u3060\u3057\u30b9\u30fc\u30d7).<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-733861\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2026\/05\/dc-2.jpg?w=640\" alt=\"\" width=\"640\" height=\"480\" \/><\/p>\n<p>The dashi cookies are part of the <strong>four-flavor Satoyama Cookie<\/strong> <strong>set<\/strong>. Satoyama is a Japanese word referring to <a href=\"https:\/\/soranews24.com\/2018\/06\/06\/beautiful-mountain-farmlands-are-yet-another-reason-to-visit-rural-japan\/\">farmlands adjacent to foothills and forests<\/a>, and that retro rural community aesthetic is present on the box lid.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-733862\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2026\/05\/dc-3.jpg?w=640\" alt=\"\" width=\"640\" height=\"480\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-733863\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2026\/05\/dc-4.jpg?w=640\" alt=\"\" width=\"640\" height=\"480\" \/><\/p>\n<p>The 16 cookies inside are arranged neatly in their own little compartments, and we started our tasting with the <strong>matcha<\/strong> and <strong>black sesame <\/strong>cookies.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-733864\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2026\/05\/dc-5.jpg?w=640\" alt=\"\" width=\"640\" height=\"480\" \/><\/p>\n<p>Fancy Japanese cookies tend to be crisp and a little crumbly in their texture, and that\u2019s true of Kayanoya\u2019s. Thankfully, they go easy on the sugar in the recipe, leaving the matcha and black sesame plenty of room to be the stars in their cookies\u2019 flavor profiles, and they\u2019re both delicious, in a sophisticated way.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-733865\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2026\/05\/dc-6.jpg?w=640\" alt=\"\" width=\"640\" height=\"480\" \/><\/p>\n<p><strong>Now, though, it was time for things to start getting unusual, and even before we got to the dashi cookie, we had a shichimi one to try<\/strong>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-733866\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2026\/05\/dc-7.jpg?w=640\" alt=\"\" width=\"640\" height=\"480\" \/><\/p>\n<p>Shichimi is a piquant allspice whose name translates literally to \u201cseven flavors.\u201d The exact mix of ingredients varies from maker to maker, but<strong> red chili powder<\/strong> is always present, and <strong>sesame<\/strong> and <strong>sansho<\/strong>, an aromatic type of Japanese pepper with bitter notes, are also regularly members of the shichimi team.<\/p>\n<p>\u25bc Somewhat confusingly, Kayanoya\u2019s shichimi cookies have black sesame sprinkled on top of them, while the black sesame cookies do not.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-733867\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2026\/05\/dc-8.jpg?w=640\" alt=\"\" width=\"640\" height=\"480\" \/><\/p>\n<p>Since this is still a cookie, we wondered if Kayanoya would perhaps use just a touch of shichimi for a little spicy accent to an otherwise sweet flavor. But nope, just like with their matcha and black sesame cookies, the taste is crafted so that you really do taste shichimi more than anything else, and<strong> this is an honestly spicy cookie that little kids probably won\u2019t enjoy, but adults with adventurous palates will<\/strong>.<\/p>\n<p><strong>And finally, we come to the dashi cookie<\/strong>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-733868\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2026\/05\/dc-9.jpg?w=640\" alt=\"\" width=\"640\" height=\"480\" \/><\/p>\n<p>Dashi is a bit of a catchall culinary term, and most commonly indicates a type of fish broth that makes heavy use of bonito stock. However, while Kayanoya does make fish-based dashi, for their dashi cookies they instead use their<strong> vegetable dashi<\/strong>, which is fish-free and instead made with <strong>onion, carrot, cabbage, celery, and garlic<\/strong>.<\/p>\n<p>\u25bc This was reassuring, since <a href=\"https:\/\/soranews24.com\/2015\/06\/25\/we-try-japanese-cakes-made-with-bits-of-tuna-what-could-go-wrong-%E3%80%90taste-test%E3%80%91\/\">we\u2019ve had some bad experiences with fish-based desserts<\/a>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-733869\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2026\/05\/dc-10.jpg?w=640\" alt=\"\" width=\"640\" height=\"480\" \/><\/p>\n<p>By this point, we knew that the primary flavor of the vegetable dashi cookie was going to be dashi, but which of those five veggies would come to the forefront? <strong>We got our answer immediately, as we took a bite and immediately had the sensation of onion firing up our taste receptors<\/strong>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-733870\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2026\/05\/dc-11.jpg?w=640\" alt=\"\" width=\"640\" height=\"480\" \/><\/p>\n<p>Now, \u201conion cookie\u201d might sounds like a cruel prank you\u2019d play on an unsuspecting person who\u2019s craving something sweet, but since we knew ahead of time that it was going to taste like vegetable dashi, the flavor wasn\u2019t bad at all. <strong>It actually reminded us of the consomm\u00e9 flavor that\u2019s the standard for Japanese potato chips, except here the supporting flavor underneath it is the buttery baked cookie dough, not an oily fried chip<\/strong>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-733871\" src=\"https:\/\/soranews24.com\/wp-content\/uploads\/sites\/3\/2026\/05\/dc-12.jpg?w=640\" alt=\"\" width=\"640\" height=\"480\" \/><\/p>\n<p>With their combination of unique flavors and high quality, the Satoyama Cookie set (which is priced at 2,268 yen [US$15]) is proving to be a hit.
